HISTORY
Gelatin dessert art has become a centerpiece of Mexican culture. The fine art of gelatin desserts first emerged in France. The technique was soon introduced in Mexico, where food artists developed and perfected this unique dessert art, “Arte Floral En Gelatina.”
Made with a combination of colored milk-based gelatin encapsulated in a delicate clear gelatin exterior, artistic talent and fantasy are brought together in a gelatin mold that can be admired both for its aesthetic beauty and sweet taste. Dessert art’s popularity continues to grow throughout Mexico and Latin America and is now finding its way to San Francisco.
PREPARATION
Instead of brushes, artists use an injection technique to prepare these intricate desserts. Using a fine flavor injector tool, a gelatin artist will create a unique three-dimensional art piece and set the work in a transparent gelatin base. Sweets Collection uses pure cane sugar, fresh fruits, premium liqueurs, food coloring and unflavored gelatin, an low-calorie, fat-free, cholesterol-free, high protein food offers a lighter alternative for after dinner sweets. Gelatin used to create floral and other designs is milk-based, while transparent gelatins are water-based. Milk enhances the vibrancy of floral designs and nutritional value of the dessert. The dessert can be preserved for up to two weeks if refrigerated.
